Coffee Walnut Muffins

1 tbsp instant coffee

½ cup hot water

1 cup milk

1 egg beaten

½ cup oil

2 cups flour

1/3 cup sugar

3 tsp baking powder

1 tsp salt

½ cup walnuts, chopped

1 tsp Bake Aid  OR 2 tsp DigestEasy


Dissolved coffee in hot water.  Add milk or cream, egg and oil.  If using DigestEasy add now, if using Bake Aid add now with flour.

In a large bowl mix together flour, sugar, baking powder and salt, then add walnuts.

Add milk mixture to dry ingredients and stir.

Spoon batter into prepared muffin pans and bake at 200°C for 15 – 20 minutes

Serve dusted with icing sugar
