½ cup raw sugar
1 cup mixed fruit
¼ cup dates
1 teaspoon mixed spice
1 cup milk
1 teaspoon bicarbonate of soda
1 ¼ cups self raising flour
¼ teaspoon Bake Aid (slightly heaped)
Place sugar, fruit, butter, spice and milk into a saucepan. Bring to the boil, stir, add soda. Allow to cool until warm.
Sift the flour and the Bake Aid 3 times, add to the other ingredients and mix through.
Grease a 7 cup pudding basin, spoon the mixture into the basin and place a round of baking paper over the surface of the pudding. Place two pieces of aluminium foil over the top of the basin and secure with string.
Place on a steamer, or a rack that will fit into a large stock pot, and pour in enough boiling water to come halfway up the side of the basin. Cover and simmer, topping up with water when necessary, for 2 hours.
To serve, invert the hot pudding onto the serving plate.
Cut into wedges and serve with cream, brandy sauce, custard or icecream.
