Follow your own bread machine recipe for bread with the following changes:
Add to the water ¼ teasppon BakeAid per cup of flour OR 1/8 teaspoon Relief per cup of Flour OR ½ teaspoon Digest Easy per cup of flour for digesting the gluten in the flour.
Do not add “Bread Improver” as the Biohawk ginger is a very effective bread improver.
If the bread rises and touches the lid next time do not make the largest loaf in the machine’s recipes. Choose the second largest because the Biohawk ginger makes a larger volume loaf.
Slice bread and store in a sealed plastic bag in the freezer and defrost in microwave when required or toast.
Bread Rolls with Bread Machine Dough
Use the “dough” ingredients and setting in your Bread machine’s recipes, which mixes the ingredients and gives the dough its first rising Add to the water ¼ teasppon BakeAid per cup of flour OR 1/8 teaspoon Relief per cup of Flour OR ½ teaspoon Digest Easy per cup of flour for digesting the gluten in the flour.
When your dough is ready, tip it onto a board that has been lightly floured with rice flour or wheat flour conditioned with Bake Aid powder.
Shape the dough into round rolls of a size that suits your purpose.
Cover the dough balls with a lightly oiled cling-film and leave to prove (to rise) in a warm place preferably around 30-35˚C until the dough ball has doubled in size (30-50 minutes).
Brush the rolls with milk (treated with Biohawk ginger) to glaze and bake in a pre-heated oven at 180-200˚C for 10-12 minutes or until golden brown.
